That sheep looks very contented! I hope all goes well over the next weeks - as mother to three who all arrived before due date, I say get your bag packed!!!
My daughter served us baked beetroot t'other day and it was very tasty. I think she baked it for about 40 mins in a hot oven (peeled and topped and tailed)

I recommend trying beetroot in chocolate cake. I've never cooked it myself but I have eaten other peoples. There are quite a few recipes on the www but I think I'd try this one: http://www.bbcgoodfood.com/recipes/7663/blitzandbake-beetroot-and-chocolate-cake
I was expecting beetroot in my veg box this week and was going to make this but it was replaced with cauliflower which I don't think would work in a cake!

My family absolutely LOVES Borscht. Have you made any with your beetroots yet? I have never really heard them called that before...just BEETS. I changed the Borscht recipe. I add a little honey or brown sugar. just a couple teaspoons also I drop the cabbage and vinegar and add some chopped fresh basil, dill or fennel. Try it different ways and see what suits you best. I just don't like it with vinegar but sometimes I'll add the chopped cabbage it depends on what I've got on hand. You HAVE to add the plop of sour cream though! It tastes so good with the beef broth and it makes a really beautiful pink color. You can make it with veggie broth if you don't eat meat.

Oh and I love your painting.

Good luck with your baby!
